"Apple Mac OS 7.1 [Performa 200] (3.5-1.44mb)" is actually 7.1P -- still missing are 7.1P1 through 7.1P6. These have minor differences in the System and Finder builds, as well as different control panel and extension configurations from a regular 7.1 build. They are all runnable on any system that can run 7.1, as long as the correct System Enabler is present.

Open Control Panels, go to General Controls and select your desktop pattern from there.
