Here is a list that I like to use on my windows 2000 machine:
Opera 10, iTunes 4.1, GTA 2, Open Office 3.3, VLC 3.x?, Putty, Adobe Photoshop 5.5, Adobe illustrator 8.0, Gimp 2.23, Corel Office 7, Dosbox .74, and SimCity 2000 for windows. I can go on and on but that is about all I actually use
Some of the software I use for my Win2000 VM are Firefox 12 (with AdBlock Plus), ClamWin Antivirus and Microsoft Office 97. If this counts, the Windows 2000 High Encryption Pack and the Unofficial Service Pack 5, where this adds a lot more features even of programs/system files normally compatible for WinXP and beyond as far as I know.
I have a ThinkPad a20m (Celeron 500, 320MB RAM) laptop running Windows 2000. There isn't a heap on there at the moment as it wasn't that long ago I did a format but I have installed:
Office XP (2002), Photoshop 7.0, Acrobat 7.0 Standard, VMware Workstation 3.1.2, and Daemon Tools 3.47.
